Evil Penevil Posted December 20, 2021 Share Posted December 20, 2021 (edited) I decided to roast some fennel tonight. My niece usually has it raw on salads. Fennel has a noticeable licorice taste when raw, but the taste becomes much more subtle when roasted. I also cooked chicken thighs three ways: first fried to brown both sides; baked in the oven to cook them through; and finally broiled a few minutes to make the skin crispy. For dessert, I had macerated raspberries and blueberries over ice cream, sprinkled with pomegranate arils.
