Had a wonderful lunch today with people

over.

Was so nice to hang out with some folks we haven’t seen for a while.

everyone is Covid tired here and expecting shit to go sideways in a month or so,so we took the opportunity to hang out.

i emptied the freezer,and cooked it all

scallops,oysters,beef,chicken all veggies from the gaaaaarden.

Coconut cake. It's a local thing, so completely handled by the Miss but I still keep an eye....

As the name indicate you start by rasping some coconut flesh.

Other ingredients are flour, sugar, oil, baking powder, eggs, and a bit of salt.

As said, handled by the Miss but under close supervision of the Master Chef, with a whisky coke at hand !

This time I decided to try in a specific mold, but we still made a few "small format" that we give to the resort owner.

And yep, normally it should be served upside down (hence the shape of the mold) but hey....

Anyway, just tasted it and the taste is very nice. This is the 4th time she makes it, and this is the best. Just one thing to improve is to have it a little bit more "light" or aired, now it's a bit too compact.

I don't usually go for ramekins  full of beans but at least it is keeping them from touching the egg. That's its only saving grace though.

I popped up north this weekend and was served this breakfast at a cafe on Flamborough Head. I'm not usually a fan of chips on a breakfast but they were doing a good job keeping those beans away from the egg. The sausages were also doing a grand job keeping the sloppy food away from the other sloppy food.
