Slightly off the topic, this was the fayre for the household today, so lunch and dinner this evening combined, it’ll be reheated and eaten with fresh rice and mango tonight. this is fish mixed with coconut milk, chillies and shrimp paste. The veg is grown in our back garden, ice no,idea what it is but it might be a relative of the Choi family or a version of Chinese celery. Very nice when blanched and cooked though. Once coconut milk is added: next is “white adobo” - Adobo is usually cooked with soy sauce and vinegar, garlic and some potato. This version substitutes the soy sauce for coconut milk, but the pork, garlic potato remain. Very nice and a lot dryer than regular adobo. Last on the list is a fish cooked in coconut milk with chillies and a splash of vinegar and local tomatoes . The fish is first marinated in garlic and vinegar and a splash of fish sauce and calamansi (Lime juice). many local dishes use coconut milk for,the cooking as it’s cheap and plentiful. I sauteed some finely chopped onions, and had a yellow pepper handy so I chopped that up and sauteed some of it. The citrus was a single fresh lime rather than a lemon, I have a tendency to overdo the lemon juice but as limes are so much smaller it's easier to control what you add. I also added a few chopped birds eye chillies rather than chilli flakes, plus a bunch of spring onions, and I did a pan of sauteed potatoes as an accompaniment. That turned out very well, the recipe's a keeper, a nice combination of garlic, onion and chilli with a gentle citrus background, and the fresh asparagus was sufficiently strong-tasting to easily compete with the other flavours.
