To make this they make a paste and let it age, then twice cook it and boil in a 20 litre pot. We make 10 litre at a time, restaurants make 20 litre. There's ingredients in this that you wouldn't believe. She's not allowed to give the recipe out, they get warned. This recipe and others won her restaurant the best in Scotland award from a national newspaper. So, no what we did was dish water compared to this. That's what I really miss from the States,we were in Uvalde Tx(90m west from San Antonio) for 6 months & used to eat a lot at small Mexican places or when in San Antone or Houston in some seriously good TexMex joints. Starting with something very basic, a banana cake. As I didn't have the right baking form, I used a form for pies (tartes), not the best. Obviously I didn't butter the side of the form enough, and the cake had difficulties to "rise" at the perimeter. Consistence was a bit too "compressed", not fluffy enough. The taste was very nice. Note that I don't like most of the banana cakes they make in Asia with a very strong, overwhelming banana flavor. I prefer just a nice little touch. Adding some lemon and vanilla also "breaks" a bit the banana flavor. So, next visit at Carrefour I will buy the right material. I give myself a 7/10 for this time . The recipe used, very simple. Thai Spice Posted May 24, 2020 Share Posted May 24, 2020 Yesterday evening I decided to go for something without cream or mushrooms, like potatoes fried in the pan, chicken in the oven. Of course the Miss went "Hey, I want cream and mushroom with the potatoes" Answer was easy : "You prepare yours, I prepare mine" ... I managed to succeed the fried potatoes, with a bit of young carrots, very nicely Fried in 2 spoon of olive oil (not 2 cm...), garlic, small onion, fines herbes, salt and pepper, and a bit of butter at the end Unfortunately happy with my success, I decided to have a 2nd whisky coke, and the potatoes suffered a bit of the delay ....(burned outside, soggy inside..) Chicken tights, olive oil, butter, mustard (de Dijon !), herbes de Provence. But fair to her, she admitted "woaw, very nice your potatoes..." So I guess, it goes on the "regular" menu from now on !
