Shrimp and grits is a classic southern dish, but I gave it a Mediterranean twist by using polenta. I kept the pieces of bacon from the southern version for extra flavor and saltiness. Grilled Atlantic salmon seasoned with lemon pepper, a bit of butter and lime juice, then loosely wrapped in foil and about 8 minutes per side. Indian rice seasoned with an East African pilau, mixed with corn, peas and canned shrimp. And some mushrooms sauteed in olive oil and butter, and seasoned with a bit of garlic salt.
