I tried it when I was in Amsterdam... many moons ago. Didn't care for it.

Amsterdam was a great visit. I tied a few days in there with my trip to London and Scotland. 

Enjoyed it completly. The only regret is I didn't go to the Van Gough Museum.

I had a spicy sausage spaghetti and we shared a pepperoni pizza.

She went with carbonara and we shared a baked spinach.  Most of the pizza and half of her spaghetti went home in boxes.

We expect to see penang gai on the menu back in the uk, even a pimped up version. 😀

I only cook basic stuff, would try, but have no idea where to start mate.

Easy. 

Buy ready made penang paste.

Put oil in pan, add teaspoon of paste. Fry until you can smell it

Add 1 cup coconut milk (full fat, none of that "healthy" low fat stuff) and stir.

Add chopped chicken and any veg you want.

Simmer until chicken cooked

Add teaspoon of sugar, and same of soy sauce.

Stir.

Eat.

Longest part is chopping the chicken and veg...

Not sure about the paste, but an Asian supermarket will have them. Either that, or take some back with ya...

That's a picture of one of my favourite pastes for cooking. First tried a yellow curry in Prachuap Khiri Khan and thought, wow.

Similar to a Massaman and easy to buy in most stores. I went to Lotus in Hua Hin and bought about 10, along with the Penang option. Always buy plenty when in Thailand for use back home.
