With your vegan cooking skills, why don't you look into making desserts and supplying some of these places as a sideline?.

I don't have a problem with them.  When in UK visited a couple of restaurants where they had put the food (fish/chicken) on top of the chips, causing them to go soggy.

To put a bit of a twist to Chicken Penang, once the meat is cooked, grab a banana or two and cut into 1cm slices and stir it into the curry, within 3 or 4 minutes the banana will begin to soften/melt, give it all another stir then serve and enjoy.

Many years ago i requested it in my local Thai restaurant in the UK, it proved so popular that they added it to the menu, maybe not authentic Thai but puts a most lovely 'twist' to a Penang.  ( Assuming one likes bananas of course )
